Ingredients

  • 1/2 cup Sugar
  • 1 1/2 cup fresh organic blueberries (or use Earthbound Farm Frozen Organic Blueberries)
  • 1 1/2 cup fresh organic strawberries (or use Earthbound Farm Frozen Organic Strawberries)
  • 1 tablespoon fresh lime juice

Sun-ripened strawberries and blueberries team up in this fresh-tasting, summer-sweet sauce. Partnered with vanilla bean ice cream, it’s a simple and perfect dessert. It’s also delicious served with pancakes, crêpes, pound cake or yogurt.  You could easily substitute frozen berries for the fresh ones called for in this recipe.

From The Earthbound Cook: 250 Recipes for Delicious Food and a Healthy Planet by Myra Goodman

Combine the sugar and 2 tablespoons water in a medium-size saucepan and cook over medium heat, stirring occasionally, until the sugar dissolves. Add the blueberries and strawberries and cook, stirring frequently, until the berries have softened and the sauce has thickened, about 10 minutes.

Remove the pan from the heat and stir in the lime juice. Serve warm or at room temperature.

The sauce can be refrigerated, covered, for up to 5 days. Reheat it in a microwave or over low heat before using.

This recipe makes about 2 cups of sauce.
