Ingredients

  • 1 gluten free tortilla (we used a spinach tortilla)
  • 1 handful of Earthbound Farm Organic Power Greens
  • 2 tablespoons Herbed goat cheese
  • 1 egg, scrambled
  • ¼ avocado, sliced
  • 1/2 red onion, sliced
  • 1 tablespoon pesto sauce or your favorite store-bought brand
  • 1-2 tablespoons butter or olive oil

Who doesn’t love a quick, tasty recipe that’s actually fun to make? If you know someone who’s not into that, please don’t forward them this newsletter. Because our friends at Curry Girls Kitchen are at it again – takin’ on the breakfast tortilla hack stuffed with Earthbound Farm Organic Power Greens and other tasty ingredients. Go ahead and bite this style. It’s gonna be tough not to.

Heat a small pan over medium. Add olive oil and scramble the egg until cooked. Set aside.

Keep small pan on low heat. Take tortilla and slice into bottom half. In the bottom left triangle, spread pesto. In the top left triangle of the tortilla, place sliced avocados. Then top with egg and onion slices. In the top right triangle, place a handful of power greens. In the bottom right triangle, spread goat cheese.

Fold starting at the bottom left corner. Continuing to fold up and over until you end at the bottom right corner. In a warm pan, add 1 tbsp. butter or oil and place the tortilla down. Cover with lid and cook for 2-3 min each side. Cut in half (if you want) and enjoy!

    WHY when I print a recipe — do I have to have HUGE photos AND even a blocked area where (Online) I can click onto a video PLUS all the review comments from people — you don’t need to be reading that when you are doing the recipe — read that FIRST -and then decide to make the recipe or not — PLEASE — I hate to have to print FIVE SHEETS for one recipe. PLEASE

    • Hi, Elaine. We want to thank you for bringing this to our attention. We’re actually working on re-doing the programming on our website so the recipes will print without images. Question: did you actually think the recipe is a 1-star recipe? Your thoughts matter to us. Or is the 1-star really about the unwieldy printing format?

    Don’t be put off by the disgruntled review from someone who hasn’t yet learned to cut-and-paste a recipe into Word, then erase the unwanted parts. This is a 5-star recipe! Only tiny caveat is the goat cheese, which I don’t care for — easily replaced with feta.
