One of the things we love about starting the day green – other than the pure deliciousness of it – is that we knock out at least one of the recommended servings of veggies right out of the gate! Seems like we’re all paying a bit more attention to staying as healthy as we can and good nutrition with a healthy dose of whole, fresh, organic produce is a great way to get there.  It feels so good to start the day off so right and, frankly, it’s a lot easier than you might think.

Yes, we’re greens pros around here, but it doesn’t take being a pro to crank out these simple, nourishing, and tasty morning meals.

Here are some of our favorite ways to turn the morning green…organically.

Grains + Power Greens in a Waffle!

The Power Waffle

Our friend Ashley at Edible Perspective was inspired to create this crunchy, fluffy, utterly delicious (and gluten free) waffle by our tender Organic Power Greens. So while the waffle is literally exploding with greens, they don’t overpower its flavor or textures.

 

Poached Eggs + Arugula on an English Muffin

We love the peppery, nutty flavor of arugula and it is the perfect complement to a perfectly poached egg. No specific recipe here…just toast your English muffin, give it a wee bit of butter, pile on some fresh organic arugula, and set your poached egg right on top. Break that yolk and enjoy. Pro Tip: put a little white vinegar in the water when you poach your eggs. It encourages the whites to maintain their shape.

 

Sunny-side Up Eggs + Chard in a Hash

We don’t have a specific recipe here, just encouragement to throw some stuff in a pan and top it with a sunny-side up egg. A hash traditionally is made up of chopped meat, potatoes, and onions, all sautéed together. The name is derived from French: hacher, meaning “to chop”. It originated as a way to use up leftovers. Leftovers or not, toss some chard, potatoes, onions, and maybe some bacon in a pan. Sauté. Top with your sunny-side up eggs and voilá. We give you permission to be creative.

 

Potatoes + Kale in a Quiche

Or, as in this recipe, a frittata. This dish doesn’t take a lot of work to create, but you don’t have to tell anyone. Do a little prep the night before, then pop it into the oven in the morning — and voilà, you can have an impressive and delicious breakfast while you’re still in your jammies!

Scrambled Eggs + Spinach

Maybe the easiest of the easy green ways to start the day. Wilt some spinach in a pan with some butter or oil, then swirl in your beaten eggs, season with salt and pepper and scramble away. Add a little extra umami to this satisfying sauté with a little parmesan cheese or truffle oil. Or why not both?
